Brazil is often cited as the second country with the world's largest production of dulce de leche (DL). However, its production profile is extremely fragmented - there are more than 350 manufacturers mapped in Brazil - this scenario makes it difficult to collect real production data. Currently, Brazilian universities are the ones that publish the most studies on DL worldwide (a fact that is still little known), with emphasis on institutions in the State of Minas Gerais, which accounts for the largest production of dulce de leche in the country. The combination of two of the main Brazilian commodities (milk and sugar) allows adding value to the DL manufacturing process due to the strong influence of the compounds generated during the Maillard reaction (MR) on the characteristics of flavor, color, texture and odor. In other words, Brazil has a unique potential to be the world leader in the industrial and scientific production of DL.
